A silent stunner from Nazareth, San Augustin, Huila, Colombia this coffee speaks volumes without being too loud. The credit for this coffee goes to Stiven Hoyos, a young, fourth-generation coffee farmer who has learned the tools of the trade from his father Rodrigo – a true lover of the Colombian countryside and the coffee plantations within it. Like his father, Stiven grew up harvesting coffee alongside his brothers, learning the various tasks related to crop management and coffee processing. Though he intended to attend university, a disappointing entrance exam and disillusion with the big city brought him back to the farm full-time, embracing his position as his father’s main assistant and being granted his own plot of land to manage.
Generations of knowledge and trust carried Stiven through a journey of planting 800 caturra trees, raising them into production and eventually convincing his family to take a chance on planting Rosé Bourbon (pink bourbon as we know it) – a variety that was just starting to gain recognition at the time back in 2017. 5,000 trees and many years later, the pink varietals are at full production; gaining recognition for their exceptional yield quality at altitude. Stiven understands the importance of not only growing a good crop but also receiving global appreciation from the people drinking it. For Stiven, seeing buyers and roasters make the journey out to his farm is the clearest sign that his work is being valued — and the best motivation to continue his practice.
The resulting coffee is clear, structured, and holds itself with a quiet elegance and firm acid often recognized in the pink bourbon variety. Each sip of this coffee is well rounded with juicy notes of oolong tea, grapefruit, and brownie batter combined with a lingering, silky jasmine finish. This coffee is easy to work with on slow mornings and yet also a discreet way to wow friends and family. Our preferred method is a V60 (or Chemex to share) but we also recommend trying it as a cold brew to enjoy a floral treat on a sunny afternoon.
