If you've spent enough time sitting at the bar at either of our locations, you know you have some story of a connection you made that bore surprising fruit. Believe it or not, this coffee is one of those. Over the course of many espressos our trader shared their experiences going to Peru with their colleagues and meeting the many producers they work with out there. Having this sense of connection to an organization that commits themselves to good work on the ground in Peru made it an easy decision to add these Peruvian coffees to our menu.

This lot from Hualla in Calca, Cusco is sourced by a collective called Valle Inca that Red Fox, our trader, has a long history with. Where Valle Inca normally works with multitudes of smallholder farmers to bundle their coffees into community blends, like our Peru Comunidad Suriray, producer Fermin Mendoa Alcazar's coffees stood above the crowd on their own. This lot in particular from his Finca Senccan shines like a plum-studded creme brulee. Zingy tamarind acidity is balanced by the roundness of almond and a curious, calming hint of chamomile tea. This coffee delivers in layers and morphs with time as it cools. It's roasted on the lighter side of the spectrum, but has enough rich sweetness to satisfy most palates.
