On the southeastern shores of Guatemala's famed crater lake, Atitlán, lies the stunning town of San Lucas Tolimán. The lofty and lush hills surrounding the town are perfectly hospitable for growing high-quality coffee, leading a number of native Kaqchikel coffee growers to band their production together under a cooperative called Tinamit Tolimán. Selling collectively since just 2018, the 26-member cooperative has already proven the quality of their products while also dedicating themselves to preserving the local environment. While the cooperative has seen success selling a range of natural, honey, and washed coffees on the international market, they do so while still maintaining a supply to show off at their local roastery and cafe in town.
Ours is a washed offering from Tinamit, displaying a vibrant and intriguing profile while staying accessible. The coffee opens with a woody sweetness of dried fig and chocolate nougat as a raspberry acidity shines through. This bracing opening mellows as the coffee coats the palate leaving a full, warm, and inviting mouthfeel that intrigues even as the coffee cools down.
